
Quick Pickled Red Onion

Ingredients
- 1 Red onion, large
- 1 cup White vinegar (or apple cider vinegar)
- 1 cup Water
- 3 tbsp Granulated sugar
- 1 tbsp Kosher salt
- 2 Garlic cloves, smashed
- 1 tsp Peppercorns (optional)
Directions
- Prep Onion: Use a chef knife to peel the red onion and slice it into thin, even rings or half-moons. Aim for about 1/8 inch thick slices for a balance between texture and quick pickling.
- Make the Brine: In a small saucepan, combine vinegar, water, sugar, salt, garlic cloves and peppercorns (if using). Bring the mixture to a boil, stirring to dissolve the sugar and salt, then remove from heat.
- Pickling Process: Place the sliced onions into a heatproof container. Pour the hot brine over the onions, ensuring they're fully submerged.
- Cool & Store: Let the mixture cool to room temperature, then cover and refrigerate for at least 2 hours before serving, but for best results serve after at least 24 hours.
