Leafy Greens Pesto

Ingredients

  • 3-4 cups Leafy greens (washed, stems removed)
  • ½ cup Nuts of choice (pine nuts, almonds or walnuts)
  • 2-3 Cloves garlic
  • ½ cup Olive oil
  • ½ cup  Parmesan, grated
  • 2 tbsp Fresh lemon juice
  • Salt and pepper to taste

Directions

Use wilted kale, spinach, or arugula to make a quick pesto!

  1. Chop leafy greens, nuts and garlic together using the SuperSonic Chopper Extra, chopping the leaves in batches if necessary.
  2. Add remaining ingredients, cover and blend until smooth.
  3. Use the pesto on pasta, sandwiches, or as a dip.
