
Leafy Greens Pesto

Ingredients
- 3-4 cups Leafy greens (washed, stems removed)
- ½ cup Nuts of choice (pine nuts, almonds or walnuts)
- 2-3 Cloves garlic
- ½ cup Olive oil
- ½ cup Parmesan, grated
- 2 tbsp Fresh lemon juice
- Salt and pepper to taste
Directions
Use wilted kale, spinach, or arugula to make a quick pesto!
- Chop leafy greens, nuts and garlic together using the SuperSonic Chopper Extra, chopping the leaves in batches if necessary.
- Add remaining ingredients, cover and blend until smooth.
- Use the pesto on pasta, sandwiches, or as a dip.
